Cinco De Mayo is a day of celebration. A victory against the French in the era of the American Civil War (1862). A lot of people have adopted the misconception that it is Mexico’s independence day. And no it isn’t Pancho’s birthday.

As mentioned prior my wife is a chef. She owned and operated her restaurant for three years. She didn’t serve much in terms of Mexican food at her restaurant. But tonight’s Mexican pizza was brilliant. I love pizza, and we’re drinking tiger blood with this one.

Ground beef, sour cream, tomatoes, green onion, and homemade guacamole made for a culinary adventure. This amazing epicurean experience was washed down with Corona Light which I’m about to review. What did you have for Cinco DeMayo?
