This was an excellent meal! Amanda made this for our dinner tonight. This stuffed eggplant came complete with Chicken, Feta, balsamic reduction, truffle olive oil, onions, Penzey’s Sunny Paris Seasoning, basil, and love! I enjoyed this savory dish! I loved the stuffing, and also the delicate eggplant! My wife is truly a talent!
